It's interesting to note that the method of preparation that most closely resembles Eastern NC BBQ (whole hog cooked over coals, served with a vinegar sauce) actually originated in the Tidewater area of Virginia. It slowly migrated southward into the eastern part of our state and died off in the Tidewater area. Fun factoid from a barbecue nerd. “Fuck barbecue, in Virginia we’re all about ham.”
